SHARPENING AND EDGING

  1. Angle the Ultra-Tek to a raw sharpening angle of 18° to 22°.
  2. Starting at the bottom of the blade and the top of the sharpener, pull the blade down and over the top of the sharpener, creating a slight curve (as pictured). Do the same with the bottom of the sharpener, as pictured. This will make the tip of the blade sharper.
  3. Repeat step two about three to five times to make your knife sharper.
